I've already shared my husbands favorite way to use Zatarain's Creole Seasoning....this i my favorite way!
First off, I love baked potatoes, and back in my unhealthier years I loved tater logs. In recent times I have taken the best of both worlds and made a healthy alternative.
- 1 (5lb) bag of medium potatos
- Zatarain's Creole Seasoning
Take your potatos and slice them into quarters. Arrange them on a large pizza pan or baking sheet (a 5lb bag will fit on my large pizza pan). They cook just fine even if they are placed right up next to each other. Take your Zatarain's Creole Seasoning and sprinkle back and forth, left and right all over your potato wedges. When you're done you should see a moderate amount on each wedge (or if you really want a spicy mouth, you should see a lot!). Place them in the oven at approximately 375 degrees and bake for 45 minutes to 1 hour. (The time really depends on the texture you like for your potato wedges to have.) They will brown up nicely and are a wonderful appetizer for dinner or any party. One medium potato (four wedges) is only approximately 100 calories (according to my bag), so you're not going to break your calorie bank with a handful of these.
I, personally, eat mine plain, so adding no extra calories with a sauce is a major bonus! For myself, they provide a wonderfully healthy alternative to deep fat fried tater logs. Hope you enjoy!
